Instructions
In a medium mixing bowl, combine honey and Dijon mustard. Whisk together until smooth.
Add apple cider vinegar to the mixture, continuing to whisk until fully incorporated.
Slowly drizzle in the olive oil while whisking to create an emulsified dressing.
If the dressing is too thick for your liking, stir in a tablespoon of water to achieve your desired consistency.
Season with salt and pepper to taste, adjusting sweetness or tanginess if necessary by adding more honey or mustard.
Store the dressing in an airtight container in the refrigerator for up to one week, and be sure to shake well before each use.
