Ingredients

1 cup fresh spinach, chopped

1 cup artichoke hearts, drained and chopped

1 cup cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon lemon juice

Salt and pepper to taste

1 package mini phyllo pastry shells (15 count)

Olive oil for drizzling

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the softened cream cheese, sour cream, and grated Parmesan cheese. Mix until smooth and creamy.

Add in the chopped fresh spinach, artichoke hearts, minced garlic, lemon juice, and half of the mozzarella cheese. Season with salt and pepper to taste. Stir until all ingredients are well combined.

Place the mini phyllo pastry shells on a baking sheet.

Spoon the spinach and artichoke mixture into each phyllo shell, filling them generously.

Top each filled shell with a sprinkle of the remaining mozzarella cheese.

Drizzle a touch of olive oil over the filled shells for extra crispness.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the phyllo shells are golden brown.

Remove the bites from the oven and let them cool for a few minutes before serving.
