Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined; set aside.
In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
Beat in the egg, vanilla extract, and almond extract (if using) until well incorporated.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. If the dough seems too dry, add the tablespoon of milk to help with the texture.
Using a cookie scoop or your hands, form small balls of dough (about 1 inch in diameter) and roll them in extra granulated sugar to coat.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart as they will spread slightly while baking.
Bake in the preheated oven for 8-10 minutes, or until the cookies are just set and the edges are lightly golden. Be careful not to overbake; they should look slightly underdone in the center.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
