4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

2 lemons (1 zested and juiced, 1 sliced)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup cherry tomatoes, halved

1 medium red onion, sliced

Fresh parsley, for garnish

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Marinade: In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, smoked paprika, salt, and black pepper.

      Marinate Chicken: Place the chicken thighs in a large bowl or ziplock bag, then pour the marinade over them. Ensure the chicken is well coated. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

        Prepare Sheet Pan: On a large sheet pan, arrange sliced red onions and halved cherry tomatoes. Pour any remaining marinade over the vegetables.

          Arrange Chicken: Nestle the marinated chicken thighs on top of the vegetables, skin side up. Add lemon slices around the chicken for an extra burst of flavor.

            Roast in Oven: Place the sheet pan in the preheated oven and roast for 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.

              Broil for Extra Crispiness: For an extra crispy skin, switch to broil mode for the last 2-3 minutes, keeping a close eye to prevent burning.

                Garnish & Serve: Once done, remove from the oven and garnish with freshly chopped parsley before serving. Serve hot directly from the sheet pan for a rustic presentation.
