1 cup bell peppers (red, yellow, and green), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 cup zucchini, sliced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

2 teaspoons fresh ginger, minced

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (optional thickener)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Prepare the vegetables: Wash and slice all the vegetables into uniform pieces to ensure even cooking.

    Heat the oil: In a large skillet or wok, heat the sesame oil over medium-high heat.

      Sauté aromatics: Add the minced garlic and ginger to the pan, and sauté for about 30 seconds until fragrant but not browned.

        Add vegetables: Toss in the bell peppers, broccoli, snap peas, carrot, and zucchini into the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp, stirring frequently.

          Season the stir-fry: Pour in the soy sauce, and season with salt and pepper to taste. If you want a thicker sauce, add the cornstarch-water mixture and stir well to combine.

            Cook further if needed: Continue cooking for an additional 1-2 minutes, allowing the sauce to thicken while stirring.

              Serve: Remove from heat and sprinkle with sesame seeds before serving.
