Prepare the Crust: In a mixing bowl, combine the crushed Oreo cookies and melted butter. Stir until the cookies are evenly coated in butter.
Form the Crust: Press the Oreo mixture into the bottom and up the sides of a 9-inch pie pan. Use your fingers or the back of a measuring cup to compact it into an even layer. Place the crust in the refrigerator for 15 minutes to firm up.
Make the Filling: In a large bowl, combine the softened cream cheese, powdered sugar, and peppermint extract. Use an electric mixer to beat until smooth and creamy.
Fold in Whipped Cream: Gently fold in the whipped cream until fully incorporated, creating a light and airy filling.
Fill the Crust: Remove the crust from the refrigerator and pour the peppermint filling into the Oreo crust, smoothing the top with a spatula.
Chill: Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
Serve: Once set, remove the pie from the refrigerator and garnish with chocolate shavings or crushed candy canes on top.
Notes
Serve slices on a festive plate, and add a dollop of whipped cream on the side for a decorative touch.
