Instructions
Preheat your oven to 400°F (200°C) and grease a baking dish with a little olive oil.
In a medium bowl, combine the Greek yogurt, Dijon mustard, honey, minced garlic, paprika, onion powder, thyme, salt, and black pepper. This marinade will keep your chicken moist and flavorful.
Place the chicken breasts in the baking dish. Pour the yogurt mixture over the chicken, ensuring each piece is thoroughly coated. If you like a crunchy texture, sprinkle breadcrumbs on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. This helps the chicken to steam and stay juicy.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F or 74°C) and the top is golden brown.
Remove from the oven and let the chicken rest for 5 minutes before slicing.
Serve hot, garnished with freshly chopped parsley for a pop of color and added flavor.
