In a large mixing bowl, combine the ground chicken, almond flour, grated Parmesan cheese, chopped green onions, egg, minced garlic, paprika, salt, black pepper, and cayenne pepper (if using).
Mix all the ingredients together thoroughly until well combined. You can use your hands for better mixing.
Divide the mixture into six equal portions and shape each portion into a patty, roughly 1 inch thick.
Heat the olive oil in a large skillet over medium heat.
Once the oil is hot, carefully place the chicken patties in the skillet, cooking in batches if necessary to avoid overcrowding.
Cook each patty for about 5-6 minutes on one side until golden brown, then flip and cook for an additional 5-6 minutes on the other side, or until they reach an internal temperature of 165°F (75°C).
Once cooked, remove the patties from the skillet and allow them to drain on a paper towel to remove excess oil.
Garnish with fresh parsley before serving.
Notes
Serve on a leaf of romaine lettuce with avocado slices and a dollop of sour cream or guacamole for added flavor.
