4 cups vegetable broth (homemade or low-sodium)

1 cup mushrooms (cremini or button), sliced

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup grated Parmesan cheese (or a vegan alternative)

1/2 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Aromatics: Set the Instant Pot to the sauté setting. Heat olive oil and add the chopped onion. Cook for 2-3 minutes until translucent. Add minced garlic and sliced mushrooms, stirring occasionally, until the mushrooms have released their moisture and are slightly golden (about 5 minutes).

    Add Rice: Stir in the Arborio rice, letting it toast slightly for about 1-2 minutes, ensuring every grain is coated with oil.

      Pour in Broth & Season: Add the vegetable broth, dried thyme, and season with salt and pepper. Stir well to combine all ingredients.

        Pressure Cook: Close the lid of the Instant Pot and set to manual high pressure for 6 minutes. Ensure the vent is sealed.

          Release Pressure: Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release of any remaining pressure.

            Stir in Cream and Cheese: Open the lid and stir in the heavy cream and grated Parmesan cheese until melted and creamy. Taste and adjust the seasoning if needed.
