Instructions
Preheat your oven to 375°F (190°C) and line a sheet pan with parchment paper or lightly grease it.
In a large mixing bowl, combine the ground beef and ground turkey. Mix well.
Add the breadcrumbs, Parmesan cheese, grated carrot, chopped onion, garlic, eggs, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper to the meat mixture.
Thoroughly combine all ingredients until well mixed, but avoid overworking the meat.
Shape the meat mixture into a loaf shape and place it in the center of the prepared sheet pan.
Arrange the mixed vegetables around the meatloaf, drizzling them with olive oil, salt, and pepper. Toss to coat.
Spread a layer of ketchup over the top of the meatloaf for added flavor and moisture.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C).
Once done, remove from the oven and let it rest for 10 minutes before slicing.
Garnish with freshly chopped parsley before serving.
