Ingredients

1 pound baby carrots (or regular carrots, peeled and sliced)

3 tablespoons honey

2 tablespoons Dijon mustard

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Carrots: If using regular carrots, peel and slice them into similar-sized pieces to ensure even cooking. If using baby carrots, simply wash them well.

Cook the Carrots: In a medium pot, bring water to a boil. Add the carrots and cook for about 5-7 minutes or until just tender but still firm. Drain and set aside.

Make the Glaze: In a separate large skillet, melt the butter and olive oil over medium heat. Once the butter is fully melted, add the honey and Dijon mustard. Stir to combine.

Season: Sprinkle the garlic powder into the skillet with the honey-mustard mixture. Season with salt and pepper to taste. Stir continuously for about 2 minutes, allowing the mixture to bubble and thicken slightly.

Glaze the Carrots: Add the cooked carrots to the skillet and toss them in the honey mustard glaze. Cook for an additional 3-4 minutes, stirring frequently until the carrots are well coated and heated through.

Garnish and Serve: Remove from heat, and sprinkle chopped parsley over the glazed carrots for a fresh touch. Serve warm as a delightful side dish.
