Wash and peel the russet potatoes, then cut them into thin strips (about 1/4 inch thick) to resemble fries.
Rinse the cut fries in cold water to remove excess starch, then pat them dry with a clean kitchen towel.
In a large mixing bowl, combine the dried fries with olive oil, minced garlic, oregano, paprika, salt, and pepper. Toss well to ensure the fries are evenly coated.
Spread the fries out in a single layer on a baking sheet lined with parchment paper to prevent sticking.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
Once out of the oven, immediately sprinkle grated Parmesan cheese all over the fries while they are still hot for the cheese to melt slightly.
Garnish with freshly chopped parsley for a pop of color and flavor.
