In a mixing bowl, combine the minced garlic, olive oil, rosemary, thyme, paprika, salt, and pepper. Add the chicken breasts and coat them evenly with this mixture.
In another bowl, toss the diced potatoes with olive oil, salt, pepper, and half of the grated Parmesan cheese. Make sure the potatoes are well-coated.
In a shallow dish, combine the remaining Parmesan cheese with breadcrumbs. Take each chicken breast and coat it in the mixture, pressing lightly to ensure an even coating.
In a large baking dish, arrange the coated chicken breasts at the center. Surround them with the seasoned potatoes.
Place the baking dish in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender and golden brown.
Once out of the oven, let it sit for a few minutes. Garnish with fresh parsley for a pop of color.
