In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, chopped rosemary, chopped thyme, and smoked paprika.
Season the mixture with salt and pepper to taste. Toss everything together until the potatoes are well coated in the herb and oil mixture.
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.
Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, tossing once halfway through cooking for even browning.
Once roasted, remove the potatoes from the oven and let them cool slightly.
Garnish with freshly chopped parsley before serving.
