In a mixing bowl, combine the crushed Lotus Biscoff biscuits and melted butter until the mixture is well combined and resembles wet sand.
Press the biscuit mixture firmly into the bottom of a lined 8-inch (20cm) square baking pan to form an even base. Use the back of a spatula to make sure it's packed tightly.
In a separate bowl, mix the Biscoff spread and softened cream cheese until smooth and creamy.
Spread the Biscoff and cream cheese mixture evenly over the biscuit base, leveling it out with a spatula.
Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until fully melted and smooth.
Pour the melted chocolate over the Biscoff layer, spreading it evenly to cover the surface.
Optionally, sprinkle a few sea salt flakes over the top for a sweet and salty flavor contrast.
Place the pan in the refrigerator to set for at least 2 hours or until firm.
Once set, remove the bars from the pan using the lining paper and cut into squares or rectangles using a sharp knife.

Arrange the bars on a beautiful platter, drizzling some additional melted Biscoff spread on top for an extra touch of elegance. Enjoy with a cup of tea or coffee!
