Ingredients
2
lbs
boneless, skinless chicken breasts
1
packet
ranch seasoning mix
1
8 oz package
cream cheese
1
cup
cheddar cheese, shredded
0.5
cup
cooked bacon, chopped (or turkey bacon)
0.25
cup
green onions, chopped
1
cup
chicken broth
to taste
salt and pepper
optional
sliced jalapeños for heat
Instructions
Place the chicken breasts in the bottom of the crockpot. Season with salt, pepper, and sprinkle the ranch seasoning mix evenly over the chicken.
Add the chicken broth to the crockpot to help the chicken cook and keep it moist.
Cut the cream cheese into cubes and place on top of the chicken and ranch seasoning.
Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
Once cooked, shred the chicken directly in the crockpot using two forks, mixing in the melted cream cheese and ranch dressing as you shred.
Stir in the shredded cheddar cheese and cooked bacon, letting it melt into the mixture for an additional 10 minutes on high.
Before serving, top with chopped green onions and jalapeños if desired, mixing them in for added flavor.
Notes
Serve with extra green onions and jalapeños for garnish. Great in sliders or lettuce wraps for a low-carb option.
