1 pound large shrimp, peeled and deveined

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons honey or agave syrup

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon chili flakes (optional for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a medium bowl, combine the coconut milk, lime zest, lime juice, honey (or agave), minced garlic, grated ginger, chili flakes (if using), salt, and pepper. Mix well to form a marinade.

    Add the peeled and deveined shrimp to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

      Heat the olive oil in a large skillet over medium-high heat.

        Remove the shrimp from the marinade (reserve the marinade for later) and add them to the skillet. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and opaque.

          Once the shrimp are cooked, pour the reserved marinade into the skillet and reduce the heat to low. Let it simmer for an additional 2-3 minutes to thicken slightly.

            Taste the sauce and adjust seasoning if necessary.

              Remove from heat and sprinkle freshly chopped cilantro over the shrimp just before serving.
