In a medium bowl, combine the rolled oats, shredded coconut, chia seeds, and sea salt.
In a separate bowl, whisk together the almond butter, honey or maple syrup, lime juice, and lime zest until smooth and well combined.
Pour the wet mixture over the dry ingredients, and mix until everything is thoroughly combined. If desired, fold in the mini dark chocolate chips.
Using your hands, form small balls (about 1 inch in diameter) from the mixture. If the mixture is too sticky, dampen your hands with water.
Place the energy bites on a parchment-lined tray and transfer them to the refrigerator for at least 30 minutes to set.
Once set, store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
