1 lb (450g) beef sirloin, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 tablespoons olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups beef broth

1 cup sour cream

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Egg noodles or rice (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and sear until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.

    In the same skillet, add the butter and allow it to melt. Sauté the chopped onion and garlic for about 2-3 minutes until softened and fragrant.

      Add the sliced mushrooms to the skillet and cook until they’re tender and have released their moisture, about 5 minutes.

        Sprinkle the flour over the cooked mushrooms and stir well to combine, cooking for another minute.

          Gradually pour in the beef broth while stirring continuously to prevent lumps from forming. Bring the mixture to a simmer and cook for about 5 minutes or until the sauce thickens.

            Lower the heat and stir in the sour cream and Dijon mustard until fully combined.

              Return the beef to the skillet and stir to coat it in the creamy sauce. Let it simmer for an additional 2-3 minutes. Season with salt and pepper to taste.

                Meanwhile, cook egg noodles or rice according to package instructions.

                  Serve the beef stroganoff over the cooked egg noodles or rice.
