Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the coconut milk, red curry paste, fish sauce, brown sugar, ginger, minced garlic, and lime juice. Whisk until smooth.
In a baking dish, place the cod fillets and season them with salt and pepper.
Pour the coconut curry sauce over the cod, ensuring the fillets are well coated.
Scatter the sliced red bell pepper and snow peas around the cod in the baking dish.
Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
Remove the foil and bake for an additional 10-12 minutes, or until the cod is opaque and flakes easily with a fork.
Once cooked, remove from the oven and let it sit for 5 minutes.
Garnish with fresh cilantro before serving.
Notes
Serve over jasmine rice with a lime wedge for extra flavor.
