In a mixing bowl, combine the shredded chicken and mashed avocado.
Add Greek yogurt, lime juice, garlic powder, cumin, salt, and pepper to the chicken and avocado mixture. Stir until well combined.
Preheat a skillet over medium heat.
On a slice of bread, spread a generous amount of the chicken-avocado mixture. Add a handful of cheese on top.
Top with another slice of bread, pressing down gently to create a sandwich.
Place the sandwich in the skillet. Cook for about 4-5 minutes per side or until the bread is golden brown and the cheese is melted.
Once done, remove from the skillet and let cool slightly.
Cut the sandwich in half diagonally and garnish with halved cherry tomatoes and fresh cilantro.
Notes
Serve the melt on a wooden board or a colorful plate, with extra cherry tomatoes on the side for a pop of color. Sprinkle some cilantro on top for an extra touch and freshness!
