Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the vegetable broth and bring to a simmer.
Once simmering, add the diced carrots and broccoli florets. Let it cook for about 5-7 minutes until the vegetables are tender.
Stir in the potato gnocchi and cook according to the package instructions, usually about 2-3 minutes.
Reduce the heat to low and slowly add the milk while stirring to combine.
Gradually add the shredded cheddar cheese, stirring continuously until melted and smooth.
Season with thyme, salt, and pepper to taste. Allow the soup to warm through for another 2-3 minutes.
Remove from heat and serve hot, garnished with fresh parsley.
