Instructions
In a small saucepan over medium heat, combine the fresh blackberries and chopped sage leaves. Heat gently while mashing the blackberries with a fork to release their juices, about 3-4 minutes.
Remove from heat and strain the mixture through a fine mesh sieve into a bowl to remove the solids, pressing down to extract as much juice as possible. Discard the solids.
In a pitcher, combine the blackberry sage syrup (the strained juice), honey (or agave syrup), and lemon juice. Stir well until the sweetener is fully dissolved.
Fill glasses with ice cubes and pour in the blackberry sage mixture until each glass is about half full.
Top each glass with sparkling water or club soda and gently stir to combine.
Garnish each drink with additional blackberries and a sage leaf for an aromatic touch.
