4 cups apples, peeled and thinly sliced (a mix of Granny Smith and Honeycrisp)

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

2 tablespoons all-purpose flour (for filling)

1 tablespoon unsalted butter, diced

1 package refrigerated pie crusts (or homemade if preferred)

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for topping)

Prepare the Filling: In a large mixing bowl, combine the sliced apples, granulated sugar, lemon juice, cinnamon, nutmeg, and flour. Toss gently to coat the apples evenly. Let the mixture sit for 15 minutes to allow the juices to blend.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Roll Out the Crust: If using homemade pie crust, roll out half of the dough onto a floured surface to fit your pie dish (9-inch). If using refrigerated, simply unroll and place it in the dish.

        Assemble: Pour the apple filling into the prepared crust and spread it evenly. Dot the mixture with small pieces of diced butter to add richness.

          Top the Pie: Roll out the second half of the dough and place it over the apple filling. Pinch the edges to seal and cut a few slits in the top crust to allow steam to escape.

            Add Egg Wash: Brush the top crust with the beaten egg and sprinkle with coarse sugar to create a shimmering, crunchy topping.
