Ingredients

  • 200 g feta cheese block
  • 400 g cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon red chili flakes
  • 300 g pasta (penne or rigatoni)
  • 4 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • fresh basil leaves for garnish
  • 1 zest of lemon
  • 1 cup spinach (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes.
  3. Add minced garlic and red chili flakes over the feta and tomatoes.
  4. Drizzle 2 tablespoons of olive oil over the dish and season with salt and pepper.
  5. Bake in the preheated oven for 25-30 minutes, or until the feta is soft and the tomatoes are blistered.
  6. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  7. Once the feta and tomatoes are ready, remove the dish from the oven. Using a fork, mash the feta into the roasted tomatoes to create a creamy sauce.
  8. Add the cooked pasta to the baking dish, along with the spinach (if using). Toss to combine and ensure the pasta is well coated in the creamy sauce.
  9. Drizzle the remaining olive oil and lemon zest over the dish before serving.
  10. Garnish with fresh basil leaves for added flavor and color.
