Vegetable Pasta Bake Savory and Easy Family Dish
Ingredients
- 300 g penne pasta
- 2 cups mixed vegetables (e.g., bell peppers, zucchini, and spinach)
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt and pepper
- 2 tablespoons olive oil
- for garnish fresh basil leaves
Instructions
- Preheat your oven to 180°C (350°F).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the mixed vegetables to the skillet and cook for 5-7 minutes until slightly tender. Season with oregano, basil, salt, and pepper.
- In a large mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, ricotta cheese, and half of the mozzarella cheese. Mix until all ingredients are well combined.
- Transfer the pasta mixture into a greased baking dish. Spread evenly and sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
