Ingredients

  • 300 g penne pasta
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, and spinach)
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh basil leaves

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the mixed vegetables to the skillet and cook for 5-7 minutes until slightly tender. Season with oregano, basil, salt, and pepper.
  5. In a large mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, ricotta cheese, and half of the mozzarella cheese. Mix until all ingredients are well combined.
  6. Transfer the pasta mixture into a greased baking dish. Spread evenly and sprinkle the remaining mozzarella and Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
