Ingredients

  • 1 lb ground chicken
  • 1 tablespoon sesame oil
  • 1 piece red bell pepper, finely diced
  • 1 piece carrot, grated
  • 2 pieces green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup unsalted peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional for heat)
  • to taste salt and pepper
  • 1 head butter lettuce or romaine, leaves separated
  • to taste chopped cilantro and crushed peanuts for garnish

Instructions

  1. In a large skillet, heat the sesame oil over medium heat.
  2. Add the ground chicken and cook for about 5-7 minutes, breaking it apart until it's cooked through.
  3. Stir in the minced garlic, grated ginger, diced red bell pepper, and grated carrot. Cook for another 3-4 minutes until the vegetables are slightly tender.
  4. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha (if using) until smooth.
  5. Pour the peanut sauce into the skillet with the chicken mixture. Stir well to combine and let it cook for an additional 2-3 minutes to heat through. Season with salt and pepper to taste.
  6. To serve, spoon a generous amount of the chicken mixture onto a lettuce leaf. Top with chopped cilantro and crushed peanuts, then wrap it up and enjoy!
