Thai Peanut Chicken Lettuce Wraps Flavorful and Easy Meal
Ingredients
- 1 lb ground chicken
- 1 tablespoon sesame oil
- 1 piece red bell pepper, finely diced
- 1 piece carrot, grated
- 2 pieces green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 cup unsalted peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon sriracha (optional for heat)
- to taste salt and pepper
- 1 head butter lettuce or romaine, leaves separated
- to taste chopped cilantro and crushed peanuts for garnish
Instructions
- In a large skillet, heat the sesame oil over medium heat.
- Add the ground chicken and cook for about 5-7 minutes, breaking it apart until it's cooked through.
- Stir in the minced garlic, grated ginger, diced red bell pepper, and grated carrot. Cook for another 3-4 minutes until the vegetables are slightly tender.
- In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha (if using) until smooth.
- Pour the peanut sauce into the skillet with the chicken mixture. Stir well to combine and let it cook for an additional 2-3 minutes to heat through. Season with salt and pepper to taste.
- To serve, spoon a generous amount of the chicken mixture onto a lettuce leaf. Top with chopped cilantro and crushed peanuts, then wrap it up and enjoy!
