Ingredients

  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened

  • 1 2 cup chopped pecans (optional)

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.
  2. Add the pumpkin puree, ground cinnamon, nutmeg, and ginger to the cream cheese mixture. Mix until well combined.
  3. Carefully fold in the whipped topping until the mixture is light and fluffy. This will create a creamy, airy filling for your parfaits.
  4. In serving glasses or bowls, start layering the parfaits: Begin with a layer of crushed graham crackers at the bottom.
  5. Add a layer of the pumpkin cheesecake mixture on top of the graham crackers.
  6. Repeat the layers until the glasses are filled, finishing with a layer of the pumpkin cheesecake mixture.
  7. Top each parfait with additional whipped topping, a sprinkle of crushed graham crackers, and a few chopped pecans, if using.
  8. Finish off with a dusting of cinnamon on top for an extra touch of flavor.
