Ingredients

  • 2 whole ripe bananas
  • 0.5 cup natural peanut butter
  • 0.25 cup honey
  • 0.25 tsp cinnamon
  • 0.5 cup granola
  • to taste optional dark chocolate chips

Instructions

  1. Peel the bananas and slice them into 1/2 inch thick rounds. You should have about 16-20 rounds.
  2. In a medium bowl, combine the peanut butter, honey, and cinnamon. Stir until smooth and well mixed.
  3. Take a slice of banana, spread a generous teaspoon of the peanut butter mixture on top, and then place another banana slice on top to create a sandwich. Repeat until all banana slices are used.
  4. Roll each banana sandwich in granola, ensuring the bites are coated on all sides. This will add a nice crunch and texture.
  5. If you’re using dark chocolate, melt it in the microwave or over a double boiler, then drizzle it over the assembled bites for an extra touch of sweetness and visual appeal.
  6. Place the bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set. Serve cold or at room temperature.
