Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated parmesan cheese
  • 1 cup chicken broth, low sodium
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cauliflower, and broccoli.
  3. In a separate bowl, mix the cream cheese, half of the cheddar cheese, parmesan cheese, chicken broth, minced garlic, onion powder, paprika, salt, and pepper until smooth.
  4. Pour the cheese mixture over the chicken and vegetables, stirring until everything is coated evenly.
  5. Transfer the mixture to a greased 9x13 inch baking dish, spreading it into an even layer.
  6. Sprinkle the remaining cheddar cheese on top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
  9. Garnish with fresh parsley if desired.
