Lemon Garlic Butter Cod One-Pan Flavorful Dinner
Ingredients
- 4 fillets cod fillets (6 oz each)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 lemon Juice of
- 1 lemon Zest of
- 1 teaspoon paprika
- to taste Salt and pepper
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- for garnish Fresh parsley, chopped
- optional Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet or baking dish, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, making sure it doesn’t burn.
- Season the cod fillets with salt, pepper, and paprika. Place the fillets in the skillet with the melted butter and garlic.
- Pour lemon juice and sprinkle the lemon zest over the cod fillets. Use a spoon to drizzle some of the melted butter and garlic over the fillets.
- Scatter the cherry tomatoes around the cod and add the fresh spinach on top. Drizzle with the remaining 2 tablespoons of melted butter.
- Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. The tomatoes should be soft and the spinach wilted.
- Once cooked, remove from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra citrusy kick.
