Ingredients

  • 4 fillets cod fillets (6 oz each)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 lemon Juice of
  • 1 lemon Zest of
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • for garnish Fresh parsley, chopped
  • optional Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet or baking dish, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, making sure it doesn’t burn.
  3. Season the cod fillets with salt, pepper, and paprika. Place the fillets in the skillet with the melted butter and garlic.
  4. Pour lemon juice and sprinkle the lemon zest over the cod fillets. Use a spoon to drizzle some of the melted butter and garlic over the fillets.
  5. Scatter the cherry tomatoes around the cod and add the fresh spinach on top. Drizzle with the remaining 2 tablespoons of melted butter.
  6. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. The tomatoes should be soft and the spinach wilted.
  7. Once cooked, remove from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra citrusy kick.
