Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 cup diced bell peppers
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a separate bowl, mix together the ranch seasoning, cream of chicken soup, and chicken broth until well combined.
  3. Pour the mixture over the chicken breasts in the crockpot.
  4. Add the frozen corn and diced bell peppers on top without stirring.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Once cooked, shred the chicken using two forks and stir everything in the crockpot until well combined.
  7. Add the sour cream and shredded cheddar cheese to the crockpot, mixing until the cheese is melted and the sauce is creamy.
  8. Season with salt and pepper to taste before serving.

Serve over rice or noodles, garnished with fresh parsley.
