Cornbread Honey Butter Muffin Bites Delightful Treat
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 4 cup granulated sugar
- 1 cup milk
- 2 large eggs
- 1 4 cup unsalted butter, melted
- 1 2 cup honey
- 2 tablespoons unsalted butter, softened (for the honey butter)

Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a mini muffin tin.
- In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and granulated sugar. Mix well to ensure there are no lumps.
- In another bowl, whisk together the milk, eggs, and melted butter until well blended.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Fill each muffin tin cavity about 2/3 full with the batter.
- Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Meanwhile, in a small bowl, mix the softened butter and honey together until smooth. This will be your honey butter.
- Once the muffins are done, remove them from the oven and let them cool slightly in the tin for about 5 minutes before transferring them to a wire rack.
- Serve the muffin bites warm, drizzled with extra honey and a dollop of honey butter on top.
