Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 4 cup granulated sugar
  • 1 cup milk
  • 2 large eggs
  • 1 4 cup unsalted butter, melted
  • 1 2 cup honey
  • 2 tablespoons unsalted butter, softened (for the honey butter)
  • 0 additional honey for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a mini muffin tin.
  2. In a mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and granulated sugar. Mix well to ensure there are no lumps.
  3. In another bowl, whisk together the milk, eggs, and melted butter until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Fill each muffin tin cavity about 2/3 full with the batter.
  6. Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  7. Meanwhile, in a small bowl, mix the softened butter and honey together until smooth. This will be your honey butter.
  8. Once the muffins are done, remove them from the oven and let them cool slightly in the tin for about 5 minutes before transferring them to a wire rack.
  9. Serve the muffin bites warm, drizzled with extra honey and a dollop of honey butter on top.
