- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 0.5 cup granulated sugar
- 0.25 cup unsalted butter, melted
- 1 large egg
- 0.75 cup buttermilk
- 1 tsp vanilla extract
- 0.5 cup granulated sugar (for coating)
- 1 tbsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and grease a standard muffin tin with cooking spray or line it with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and 1 tsp of ground cinnamon until well combined.
- In another bowl, combine ½ cup of granulated sugar with melted butter and mix until smooth.
- Add the egg, buttermilk, and vanilla extract to the butter-sugar mixture and whisk until well blended.
- Gradually fold the dry ingredients into the wet ingredients, mixing just until combined; be careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-18 minutes or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, prepare the cinnamon sugar coating by mixing ½ cup of granulated sugar with 1 tbsp of ground cinnamon in a bowl.
- Once the muffins are done, remove them from the oven and let them cool for 5 minutes in the tin.
- While the muffins are still warm, gently roll them in the cinnamon sugar mixture until they are fully coated.
- Transfer the muffins to a wire rack to cool completely, or serve warm for a gooey treat.
