Ingredients

  • 2 cups cooked chicken breast, shredded
  • 4 cups mixed salad greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh, canned, or frozen)
  • 0.5 cup black beans, drained and rinsed
  • 0.5 medium red onion, thinly sliced
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup crispy tortilla strips (for garnish)
  • 0.5 cup BBQ sauce
  • 0.25 cup ranch dressing
  • 0 to taste salt and pepper

Instructions

  1. In a large mixing bowl, combine the shredded chicken with BBQ sauce. Toss until the chicken is well coated.
  2. In another large bowl, add the mixed salad greens as the base.
  3. Layer the halved cherry tomatoes, corn, black beans, and red onion over the greens.
  4. Add the BBQ chicken on top of the salad.
  5. Drizzle ranch dressing over the entire salad, using more or less to taste.
  6. Sprinkle shredded cheddar cheese over the salad for an extra layer of flavor.
  7. Gently toss the salad ingredients together, or keep it layered for a more visually appealing presentation.
  8. Season with salt and pepper as desired.
  9. Top with crispy tortilla strips for added crunch just before serving.
