Ingredients

  • 1 package frozen dumplings (chicken, vegetable, or pork)
  • 6 cups chicken or vegetable broth
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup bok choy, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 carrot julienned
  • 2 green onions sliced
  • 1 tablespoon soy sauce
  • to taste salt and pepper
  • optional fresh cilantro for garnish
  • optional chili oil for serving

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant (about 1-2 minutes).
  2. Pour in the chicken or vegetable broth, and bring it to a gentle boil.
  3. Add the frozen dumplings to the pot and cook according to package instructions (usually about 5-7 minutes).
  4. Once the dumplings are nearly cooked, add the chopped bok choy, sliced shiitake mushrooms, and julienned carrots to the pot.
  5. Continue cooking for an additional 3-5 minutes until veggies are tender but still vibrant.
  6. Stir in the soy sauce, then season with salt and pepper to taste.
  7. Ladle the soup into bowls, topping each with sliced green onions and cilantro, if desired.
  8. Optional: Drizzle a little chili oil on top for extra flavor before serving.
