Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 1 cup buttermilk (or milk + 1 tablespoon lemon juice)
  • 2 large eggs
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)
  • 1 cup walnuts or pecans, chopped (optional)
  • 0.5 cup brown sugar
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon cinnamon
  • 0.25 cup unsalted butter, softened
  • 0.5 cup oats

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with butter.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract until well blended.
  4. Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Fold in the diced apples and walnuts or pecans (if using) into the batter gently.
  6. In a small bowl, mix together the brown sugar, flour, and cinnamon. Add the softened butter and oats, mixing with a fork until crumbly.
  7. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping generously over each muffin.
  8. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serve these delightful muffins on a wooden platter, dusted with powdered sugar, and pair them with a side of honey or maple syrup for added sweetness. You can also garnish with a thin apple slice on top for a decorative touch.
