Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder

- 0.25 cup unsalted butter, softened
- 0.5 cup oats
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with butter.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract until well blended.
- Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Fold in the diced apples and walnuts or pecans (if using) into the batter gently.
- In a small bowl, mix together the brown sugar, flour, and cinnamon. Add the softened butter and oats, mixing with a fork until crumbly.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping generously over each muffin.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
