Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 cup apple cider
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 0 to taste salt
  • 0 to taste pepper
  • 1 tablespoon olive oil
  • 0 for garnish fresh parsley

Instructions

  1. In a small saucepan, combine apple cider, apple cider vinegar, honey, Dijon mustard, thyme, garlic, salt, and pepper. Bring the mixture to a gentle boil over medium heat while stirring occasionally.
  2. Reduce the heat to low and let the sauce simmer for about 10-15 minutes, or until it has thickened slightly. Remove from heat and set aside.
  3. Preheat your oven to 400°F (200°C).
  4. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown. Flip the chicken thighs and sear the other side for 3-4 minutes.
  6. Pour the apple cider glaze over the chicken thighs, ensuring they are well coated.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
  8. Remove the skillet from the oven, and let the chicken thighs rest for 5 minutes.
  9. Drizzle some additional glaze from the skillet over the chicken before serving.
